today was a day for cake. a day for fluffy, made from scratch, white cake with white, gooey, cloud-like frosting. if it we're up to the kid in me, and if it we're up to my kids, most days would be days for cake.
lately we have been baking donuts. lots and lots of donuts. my kids told me that they love it when i am pregnant because i crave sugar and that means that they get to have sugar too. i usually fulfill most of my cravings. last week i ran to the grocery store, kind of late at night. it was around 9:30 p.m., a time that i am rarely out browsing the aisles of the super market but i had a craving for bread and cheese and was determind to have it. i went and i returned... with not only two kinds of artisan bread and three different kinds of over priced stinky cheese but also four boxes of pumpkin bread mix, a box of ginger bread mix, pickles (typical and laughable), orange juice, and three containers of frosting. it was buy two get one free. plus some new fancy layered blueberry gum and a bottle of pellegrino. aubrey couldn't help but laugh when i walked through the door, arms full of bags and then proceeded to tell me that i am no longer allowed to "run out for a thing or two" while in my current state.
i have a very hard time not satisfying my many cravings while i'm pregnant, sweet or savory. and this morning was no exception. but i didn't crave donuts this morning, i craved scrumptious cake. and i baked one, with a little help from my plum. and our cake turned out quite good.
the recipe is from the joy of cooking and is called "white cake." i have a very old copy of this bible of kitchens, but i would think that this tasty white cake and the equally delicious "seven-minute white icing" that we made would be included in newer versions as well. i would type the recipe out for you all but it's after midnight and my eyelids are heavy.
i do recommend that you make this cake if it's a "cake day" over in your neck of the woods. we made the second, smaller quantity recipe. it made for the perfect, family sized, 9" double layer cake. we also adorned our cake with fresh sliced strawberries. i highly recommend this addition and suggest slicing some extras for every other bite or so.
this little one was quite fond of her tiny slice of cake. she actually only ate the frosting. my kind of girl.
