i am a huge fan of eggs benedict. i have yet to find a good one here in nashville, but am still on the lookout. if you know of a good spot, please let me know. we decided to make our own the other morning with what we had on hand. we roasted some asparagus and made our own hollandaise sauce. it was turned out pretty damn good, so i thought i would share this very simple meal.
you will need:
some good bread, we used sour dough
asparagus
grape seed oil
eggs
salt and pepper to taste
toss asparagus with grape seed oil on a baking sheet and then sprinkle with sea salt and pepper. roast in a 350 degree oven for 15 minutes or until golden brown. we made scrambled eggs, but you can make them how you prefer. i think i will try a fried egg next time. toast your bread. we buttered ours because buttery toast is one of my favorite things, but you can leave yours dry if you prefer. layer toast, eggs, asparagus and then top with hollandaise sauce.
