ever since my trip to austin last week i have been craving the black bean entree from magnolia's. i decided that i must try to create a similar dish because i cannot make the drive to austin each week when this craving kicks in. i had everything except for fresh avocado on hand, so this meal only cost me $1.00.
first things first. you've got to get the corn cake into the oven. mix ingredients as directed and pop into the oven according to instructions. i added a tablespoon of honey to my mixture to sweeten up the corn cake.
the beans in the dish at magnolia's had the most amazing flavor so i decided to spice up my beans with some sauteed onions and garlic, plus a little onion salt, salt and pepper. i cooked them over low heat for a good 20 minutes while i prepped everything else and made the lemon sour cream sauce.
mix sour cream, the juice and zest of one small lemon, plus a teaspoon of sugar (next time i will try honey) into a bowl and set aside.
chop your tomato and slice the avocado. once the beans are fully cooked and to taste, layer them at the bottom of your bowl. immediately top with shredded cheese so that it starts to melt. top with tomatoes, avocado and a hefty dollop of the lemon sour cream sauce. eat with fresh hot buttered corn cake.
it turned out really good. i am going to try this black bean recipe next time that sweet kelly vlass sent me. i also want to work on the lemon sour cream sauce. the one i made is very cool and refreshing and more of a sour cream than a sauce. i recall the one at magnolia's being warm and it seemed much more like a cooked sauce. mine was very good but i would like to try to figure out how to get a little closer to the original.
my girls helped me gobble this up. gemma bird was a HUGE fan of the beans while plum's favorite part was "everything but especially the lemon sour cream." i will make a much bigger serving next time knowing that they love it.
