today was a lovely, mellow, relaxed staurday at home with my little family. we spent the day cleaning, organizing and getting ready for our upcoming porch/garden project. we are building big planter boxes and planting a bunch of vegetables, herbs, fruits and flowers. we made a pretty impressive list of what we want to plant along with a few other back yard plans for this spring.
we also made BANANA BREAD! oh yeah! my mom used to make me banana bread from scratch when i was a wee little thing and she gave me the recipe once i had julian (ten years ago.) i've made it ever since and it's become a favorite in our household. today i decided to make it with a little twist. i made it gluten free. julian and milla's grandma (my ex-mother in law) is gluten intollerant and makes her own brand of gluten free flour. she sent me some to play with and so i thought it would be great to replace the flour in the break with the gluten free blend. i also replaced the oil in the recipe with apple sauce to make it a bit healthier along with cutting the sugar in half and adding honey in it's place. the banana bread was bonkers! so darn good...
what you'll need:
1 & 2/3 cups gluten free flour
1 teaspoon baking soda
1/4 teaspoon cinnamon
1/2 teaspoon sea salt
1/2 cup sugar
1/2 cup honey
2 eggs
1/2 apple sauce
4 very ripe bananas
2 & 1/2 tablespoons creme fraiche
1 teaspoon vanilla extract
mix the flour, baking soda, cinnamon and salt together in one bowl. set aside.
mix eggs, sugar, honey, vanilla in another bowl. mix well. add the applesauce and mix again. mash bananas and add to the bowl of wet ingredients.
add the creme fraiche. this is such a yummy little secret to make the bread extra moist.
fold the dry ingredients slowly into the wet ingredients. pour batter into buttered or greased loaf baking pan. bake at 350 degrees for one hour to one hour & 15 minutes.
while the banana bread was baking and the house was filling up with delicious smells, i snapped some photos of my kiddos doing what they do best... playing and just hanging out.
before we knew it the kitchen timer went off and it was time to taste it...
it turned out really good! the gluten free flour was awesome. i might need to hit up grandma for more. ::winks:: i'm excited to experiment more with gluten free recipes. twas a lovely lovely day indeed. xo!
