ello there my lovelies! how was your weekend? mine was pretty darn good. we didn't do a whole lot, mostly stayed home, did a few chores, sat on the porch and enjoyed the beautiful weather while listening to records. that's pretty much sums it up.

if you follow me on twitter you already know that i am in the middle of a two week detox cleanse. i have been sharing my progress as the days go by and i am kind of amazed by the amount of interest i have gotten from some of my followers. after many suggestions i decided that i would go ahead and write a little blog about it for those of you who are not on twitter. first of all i want to state that this cleanse is breast feeding okay. it's basically a healthy eating cleanse and eliminates all sugars, yeasts and major startches from my diet. i decided to do the cleanse for a couple of reasons. one for the obvious, i wanted to be healthier, and two because one of my best friends is doing it at the same time so i have a little support and encouragement there. there are three different versions of this cleanse. i am doing the healthy eating version.
i am on day three and so far so good. i did feel pretty crappy this morning. it is amazing how addicted my body is to sugar. not that i eat a lot of sugar but there are many carbohydrates that break down and turn into sugars. so far the things i miss most are coffee, redbull, red wine, bread and carrots. yes, i cannot eat carrots. who da thunk right?!! i had a goodbye redbull just before i started. i have such a love/hate relationship with that stuff.
i have basically been eating leafy greens, diet okay vegetables, chicken and brown rice. i tried making quinoa today for the first time and i am in love. it is so so good. i will definitely be adding quinoa to my regular meal planning. it kind of reminds me of cous cous but is a grain instead of a pasta and it is so tasty.
tonight i got really hungry and wanted to make something a little more creative so i made a sugar free, yeast free, dairy free chicken curry with quinoa. it was so declicious that i thought i would share...

ingredients:
1 tbsp coconut oil
1 large onion diced
2 vine ripened tomatoes chopped
1 small zucchini sliced
1 small yellow squash sliced
2 cloves garlic minced
1/4 tsp cinnamon
1/4 tsp cloves
1 tbsp turmeric
1 tsp fresh ginger minced
1 tsp cumin
2 tbsp coriander
1/4 tsp cayenne pepper
1 cup organic sugar free chicken stock
1/4 to 1/2 cup water
3 tbsp coconut cream
3-4 chicken breasts cut into pieces
heres whatcha do...
heat up the coconut oil in your pan or skillet. i used an iron skillet. i am obsessed with mine. i find that everything i cook in the iron skillet comes out so much better as opposed to the stainless steel. i want to buy 5 more. but anyway, back to the cooking... so heat up the coconut oil and add the onion, garlic and ginger. heat until soft and then add the spices (cinnamon, cloves, turmeric, cumin, coriander and cayenne pepper. you can add ginger if you don't have any fresh.) stir the spices into the onions and garlic and cook a little bit until the onions become transparent. next add your chicken and saute them up a bit on each side until they are a little browned and coated with the spices. add the chopped tomatoes and let them cook down for 3-4 minutes. next add the chicken stock, water and coconut cream. stir until well mixed, cover a simmer on low heat for one hour. after thirty minutes, throw in the zucchini and yellow squash and allow them to cook in the curry for the remaining thirty minutes. salt & pepper to taste and that's it!
i served mine atop some organic quinoa which takes about 15-20 minutes to make and also made myself a romaine, tomato and avocado salad with cold pressed olive oil and organic apple cider vinegar for the dressing. it was fantastic and i have so much left over that i will be eating it again tomorrow for lunch. it was so good that i didn't feel like i was on a special diet at all. by far my favorite meal i've made on this detox cleanse so far.
