last nights dinner was a success! i used ina garten's roasted chicken recipe and it was perfection. i added a couple more vegetables to the mix, some tiny fingerling potatoes and some fresh raw brussel sprouts. it was incredible. the house smelled amazing and the kiddos cleaned their plates. even the mister (my pickiest eater) said he loved it and wanted me to add it to the regular dinner rotation. (gives self high-five!)

i went to the market earlier in the day with one of my little sous chefs and we picked out all of these beautiful organic vegetables. julian picked out the cous cous side dish and the brownies for dessert. he was quite the little helper. he even carried the groceries inside for mama. what a doll.
right after i prepared the chicken and vegetables i heard the front door open and aubrey say "woah... what are you doing here?" i peek out into the living room from the kitchen to see a face that i was not expecting. it was uncle colin, (my ex-husbands brother), who was driving from florida to california and decided to pop-in, unexpectedly. it was such a nice surprise! he couldn't stay long but it was so nice to see him.

dinner was a little late since the chicken had to roast a bit longer than called for. it was partially frozen before cooking but it was so worth the wait. i also made a warm cous cous salad with hearts of palm, olives and balsamic dressing along with some sweet cornbread per the misters request.

twas a fabulous meal. the kiddos gobbled up every last bite and were pretty stoked about their late bedtime on a school night. me thinks there might be bragging on the playground today. try this recipe. it is a winner!

xoxo.
footnote: thanks for all the kind words regarding my mini mommy meltdown yesterday. the chicken and red wine along with my loving family did the trick. i feel so much better today. oh, yeah and i totally played hookie and skipped yoga class. maybe tomorrow. :)
