so i had a little bit of late breakfast this a.m. but damn was it yummy. so yummy that i thought i should share. i was going into it thinking i'd make a fancy omelet but alas i'm not an omelet maker, so it turned into a scramble and holy sheet...it was scrumptious.
i peeked into my newly cleaned out, restocked refrigerator and pulled out a few things. (btw...for those of you who follow my twitter...you will know that i don't clean my fridge, like ever. gross i know, but thanks to nesting, it's squeaky clean and nice & neat.) any whoo...i grabbed some eggs, fresh leaf spinach, mushrooms and very good parmigiano reggiano cheese. i almost used feta, but wasn't really in the mood. i take my cheese moods very seriously. here's a little step-by-step guide to what i did next...
i sauteed the mushrooms in a little bit of olive oil and some sherry cooking wine, muh fave! then added the sun dried tomatoes and spinach and cooked that down just a bit. then i added my whisked eggies that i seasoned with some s & p. i wanted it to look all chef like and appealing, but that just wasn't in the cards, so i turned it into more of a scramble. once perfectly cooked, i shaved some of the parmigiano reggiano on top and voila...it was done. about 5 minutes total to make this delicious little breakfast including fridge time. it's not the prettiest, but it was good. real good. i also had my very favorite fage greek yogurt with honey and of course o.j. with floradex, hence the dark color.
