a friend of mine introduced me to this salad a while ago and it has quickly become one of my favorites. i make a variation of it at least twice a week. the kids like it too. it's super simple and makes a quick lunch or a great side.
you will need:
a bag of 10 minute farro (found super cheap at trader joes.)
salt & pepper to taste
bring your farro to a boil and cook for ten minutes. while it's cooking chop your veggies and parsley into a small dice. drain farro and transfer to a medium sized bowl. add veggies, dressing and salt & pepper to taste. so easy!
you can throw pretty much anything into it. add feta or goat cheese, dried cranberries or avocado. substitute pine nuts in place of almonds... really anything you have on hand will work. i hope you will give it a try.
footnote: want to know a trick to keep your pot from over boiling? lay a wooden spoon across the top of your pot. it really works!!!
